I think ultimately what's in place at https://blog.kagi.com/kagi-features is the right idea in that it's pithy and easily parsed for someone who doesn't know what Kagi is or what it does. Or why you might want to pay for a search engine at all.
The only issue is that as it's a post-and-done blog post, it's always going to be out of date. Thus my idea for a living document of sorts.
I guess this can accomplished by having a single blog post which contributors update as time goes on provided it's not a hassle to do so every time a new feature is added or changed.
An example of a page I go back to all the time to look for additions and changes (and link to other people) is the Matter device list from The Verge: https://www.theverge.com/23568091/matter-compatible-devices-accessories-apple-amazon-google-samsung
This isn't quite the same thing but in the sense that it's constantly changing as devices are added, Matter spec is upgraded with new features and so on, it sort of gives you an example of what I had in mind.
In the end, when I tell other people about Kagi, it can be challenging to tell them about all the features myself and having to send 5 or 6 different blog posts or YouTube videos or an exhaustive FAQ adds a degree of friction for people to "get it".
